The total area dedicated in Castilla y León to the cultivation of legumes for human food (lentils, chickpeas, beans and dry beans) is 15,400 hectares, 18% of the national total. Of this area, 5,922 hectares are located in areas of quality figures, which represents 38% and confirms the potential of this region in the production of quality legumes, and the Autonomous Community has the largest number of quality figures of these crops in Spain. A quality protected by five protected geographical indications and two guarantee marks, which are: I.G.P. Jews of the Barco de Avila, I.G.P. Alubia de la Bañeza - León, I.G.P. Lentija de la Armuña, I.G.P. Lentija de Tierra de Campos, I.G.P. Garbanzo de Fuentesaúco; M.G. Garbanzo de Pedroillo and Judión de la Granja (PGI in processing). Also, we must not forget that the hotel channel and quality restoration is essential for the marketing of quality food from Castilla y León, strongly linked to the territory, giving value to the product that goes far beyond the other food channels. For this reason, the "Instituto Tecnológico Agrario de Castilla y León" requires to give greater visibility, relevance and public dissemination to the sector of the community's legality and, in particular, to the guarantee mark "Tierra de Sabor" and to the protected geographical indications of Castilla y León, contributing to its national expansion of the hand of gastronomy. The activities and promotional actions relating to this contract are intended to contribute to the dissemination of the legumes of Castilla y León, linked to the quality seal "Tierra de Sabor," through a national dimension competition dedicated to the culinary works of the author in Tapa format - the most popular and collective gastronomic expression of Spanish cuisine - made with legumes welcomed to the quality figures of Castilla y León as fundamental ingredients, and the celebration of the "Scientific Assembly - gastronomic of the FAO (Food and Agriculture Organization of the United Nations)." To this end, the competition calls for the registration and participation as candidates of the cooking professions of bars and restaurants throughout Spain, accredited in the form of the cover, directly or through the communiqués made to associations and professional federations of Cocineros and of business of hospitality, media, radio and national and regional television, social networks and the specific website of the competition, where their registration is facilitated by an electronic programme..
